Wow - almost a year since I last posted...I'm such a good blogger :)

Anyway, I'm just down in the kitchen cooking up something tasty and it made me want to write about it. Oy I love to cook. Basically, picked up a nice large salmon fillet at Costco Saturday, and it needed cooked since I'll be gone the next few days, so I figured I better get to it. Started with a little butter, garlic, dash of salt and pepper, and onion to saute the salmon (cut into large chunks), then added a little 2004 Windsor chardonnay to make it extra "nice" and went from there. Cooked the salmon till it was just right (tender and flaky), then removed it from the pan, added some more butter and wine and put in some angle-sliced asparagus. While that started cooked I cleaned up a couple of portabello mushrooms and sliced them into large "pie shaped" chunks, and put them on top of the asparagus. More wine (I like my food happy - a glass while cooking isn't a bad idea either), and a lid to let the veggies saute/steam together. Finally my water for the pasta reached boiling, and I slid in the fresh cheese and spinach tortellini, with a little salt and olive oil for good measure. Back to the veggies - coming along nicely - few more moments and I removed the mushrooms and added the Alfredo sauce. Simmer all that with a little extra added milk...wishing I had some arrowroot to thicken my concoction, but no such luck, so tried adding a bit of Parmigiana - didn't quite like the sharpness that added, so toned it down with a couple of measures of cream cheese. It's all blending together now, the pasta is done - and wow - it all tastes amazing. Pasta in the bowl first, sauce with the asparagus next, some nice portabellos on the sauce, then top it off with the tender salmon - delicioso! Too bad it's going to be packed away and frozen for lunch at work instead of enjoyed now with friends. C'est la vie. It's still pretty amazingly tasty though. :)
